Castalia poured its last drinks on New Year's Eve, closing on its own terms

Castalia poured its last drinks on December 31, 2025, ending an eight-year run as one of Detroit's most unusual cocktail bars. The night ran on a final list the bar called the Afterlife Menu, and reservations for it had been gone for weeks.

The bar opened in 2017 in the lower level of a Victorian building at 3980 Second Avenue in Midtown, where it shared the space with Sfumato Fragrances. The two ventures were run by the same people: Kevin Peterson and Jane Larson, who founded both, along with co-owners Kyle DuPree and Erika Kassel. By day the room was a working perfumery. At night the fixtures folded away and tables hinged down from the wall, and it became a 16-seat bar.

The signature move was the pairing. Every drink on the menu came with a house Sfumato fragrance sprayed onto the garnish. Guests were guided to sip once without it, then again while breathing in the scent. The drinks themselves were not perfumed. The room was small, the seating was tight, and the lights stayed low by design.

The owners were direct about why they were closing, and they made a point of ruling out the usual reasons. "To be clear, we're not out of money, we're not out of ideas, we don't have issues with our landlord, and our neighborhood is great," they wrote in the announcement posted on the bar's own site. "Rather, after a marvelous run of eight years, we are choosing to go out on top." They framed the decision as having answered the questions Castalia set out to answer, and as making room for new ones.

The recognition arrived late. Castalia was named a newly pinned bar in The Pinnacle Guide's 2025 list, the same year it announced it was closing. The guide describes it as an experimental, scent-paired bar where a working perfumery doubles as a lab for sensory play. Peterson also wrote a book on the subject, "Cocktail Theory: A Sensory Approach to Transcendent Drinks," while running the place.

The bar's closing statement leaned on a Leonard Nimoy line as its epitaph: "A life is like a garden. Perfect moments can be had, but not preserved, except in memory." The owners closed with a note of gratitude to everyone who had passed through the room.

The change is bigger than the bar alone. Sfumato's Midtown retail store closed the same day, December 31, and the brand is continuing as an online business selling its natural fragrances and books. The owners have said a new chapter is coming to the space with a change in ownership and direction, but as of the closing they had not named the operators or detailed what comes next. Whatever lands in the basement of 3980 Second Avenue, it will not be Castalia.

What the bar leaves behind is a run of Detroit bartenders who learned the craft in that room, national and international press, and a late spot on one of the cocktail world's watched lists. 3980 Second Ave., Midtown. Closed December 31, 2025.
