Tacos Wuey opened Friday, July 18, 2025, at 3970 W. Vernor in Southwest Detroit, putting a family birria recipe at the center of the menu.

The restaurant is the project of chef Eddie Vargas, who grew up in the neighborhood. He took over the space along the Vernor corridor and rebuilt it as a 40-seat modern taqueria with a Tulum-leaning interior of rattan and warm wood. The name is a phonetic spin on guey, the Mexican slang for buddy or friend.

Vargas told EL CENTRAL Hispanic News he set out to build something distinct from the longtime Mexicantown restaurants nearby. "I really wanted to be unique and different. So more like a modern taqueria," he said, adding that he wanted to "showcase different regions of Mexico."

The family birria runs through much of the menu. It anchors a quesabirria built on a 10-inch flour tortilla with chihuahua cheese and served with consomme, and it turns up again in birria ramen and crispy birria egg rolls. Other dishes pull from across Mexico: a ceviche salpicon of shrimp with onion, cucumber, tomato and a chile de arbol citrus sauce; gobernador tacos with shrimp, poblano and cheese; house-made guacamole served with chicharron chips; and a tlayuda, the Oaxacan dish most Detroit taquerias skip.

Vargas has said the kitchen plans to rotate new tacos in each week and does not serve rice and beans. The opening-weekend hours posted by the restaurant ran Friday and Saturday from 4 to 11 p.m. and Sunday from 4 to 9 p.m., with regular hours starting the following week.
